Fantastic and super-pistachio pasta!
Pacinotti's is a very famous spot in Palermo for its rich pistachio pasta menu—in fact, they have 16 different variations! I've tried many of them to find the most pistachio-packed one!
Every pasta dish I tasted turned out to be fantastic, all sharing these qualities:
- generous portions (you might even struggle to finish it all!)
- truly perfect al dente cooking
- abundant, high-quality toppings
- excellent flavor balance
If you are looking for their most intense pistachio-flavored pasta, the answer is simple: PISTACCHIOSA 10K.
Dressed with pistachio cream, crispy guanciale, cherry tomatoes, buffalo stracciatella, and chopped pistachios, it is a real treat both for the intensity of the pistachio and for how well all the other ingredients come together. Every bite is an explosion of flavor and pistachio; it's impossible not to love it.
I also tried their pasta dishes with fish and pistachio, which were also delicious and highly recommended, though in those cases the pistachio flavor is definitely more subtle (yet still present).
